Coombsville Cabernet Sauvignon
The Coombsville Cabernet Sauvignon is the fourth appellation wine to be introduced in our Cabernet series of very small bottlings dedicated to the benchland sub-appellations of Napa Valley. Blackberry, blueberry and black currant fruit leads to aromas and flavors of huckleberry, gardenia and iris, alongside more savory notes of cedar, sweet pipe tobacco, graphite and anise seed. A cooler and slightly smaller vintage, this Cabernet is showing darker, more intense characteristics than previous years with fine-textured, silky tannins leading to a very lengthy, lingering finish.
Pairing suggestion: Grilled lamb chops with rosemary and garlic. The savory, rich flavors of the lamb work well with the ripe fruit flavors in the wine, while the garlic and rosemary mirror its underlying earthy notes.
Oakville Cabernet Sauvignon
The Oakville Cabernet Sauvignon was the third appellation wine to be introduced in our Cabernet series of very small bottlings dedicated to the benchland sub-appellations of Napa Valley. Exhibiting notes of intense dark black cherry, red and black currants, dark chocolate, and supported by savory, earthy layers of dried lavender, black olive tapenade, graphite and black licorice. This Cabernet is exceptionally concentrated and balanced with fine-grained tannins that are well-integrated and smooth, leading to a long lingering finish.
Pairing suggestion: A classic ribeye steak with a pepper crust. The full-bodied, intense flavors of the Oakville Cab can stand up to a rich, fatty steak, and the pepper crust will echo the spice notes in the wine.
Rutherford Cabernet Sauvignon
The Rutherford Cabernet Sauvignon was the first appellation wine to be introduced in our Cabernet series of very small bottlings dedicated to the benchland sub-appellations of Napa Valley. Always showing its Rutherford pedigree, this full-bodied, richly decadent wine shows a dark, brick red color leading to aromas and flavors of ripe dark fruits including blackberry, dark cherry and plum with hints of dark chocolate, leather and cedar with evident oak spice and polished, classy tannins. Floral notes, classic Rutherford dust finish in a lingering, memorable finish reflective of the vintage.
Pairing suggestion: Braised beef short ribs or a meaty pasta, like a Bolognese. The complex, robust flavors of the Rutherford Cab will pair wonderfully with the rich, meaty flavors in the dish, while the wine's acidity will cut through the richness.
