If you have never had the good fortune of tasting caviar, it's time that you add this pairing to your "must-try" list. Caviar is considered one of the world’s delicacies. Explore the different types and ways to sample these salty fish eggs, listed below.
What is Caviar?
Caviar is unfertilized fish eggs, also known as fish roe, a natural delicacy packed with protein, amino acids, iron, and vitamin B12. Beginning in the 1800s, fish eggs were harvested and consumed from other fish species, but none have achieved the status of true caviar. Of the 27 sturgeon species, almost all can be harvested for their eggs but beluga, sevruga, and osetra have long dominated the caviar world.
How to Serve Caviar?
It's best to enjoy caviar alone or with minimal accompaniments. Once you open the jar, use it all or take out as much as you need and put the rest back in the fridge as air and heat are caviar's biggest enemies. The raw dish is classically served on a bed of ice with a caviar spoon, traditionally made of pearl or bone so the flavor of the caviar stays true.

Blanc de Noirs
A dream creation for winemaker Jon Priest, years in the making, our first Blanc de Noirs - a white sparkling wine made from Pinot Noir (black) and Chardonnay (white) grapes, is inspired by a playful experimentation which yielded a few precious cases of this truly unique California sparkling wine from our hallmark Grace Benoist Ranch, Carneros vineyards. Meant to showcase traditional Blanc de Noirs characteristics of bright fruity fleshiness and a bit more body and texture, we hope this sparkling becomes an Etude cult favorite, as its only available in very small quantities exclusively at the winery.
