Pumpkin Cookies with Cream Cheese Frosting

Directions:

Preheat the oven to 350 degrees Fahrenheit. Line a cookie sheet with parchment paper and set aside. In a large bowl, use an electric mixer on medium to high speed to beat 1 cup of butter for about 30 seconds. Combine granulated sugar, baking powder, baking soda, salt, cinnamon, and nutmeg, beating until everything is mixed well and occasionally scraping the sides of the bowl. Add 1 egg and 1 teaspoon of vanilla and beat until the mixture is combined. Add the pumpkin into the mixture, followed the flour and beating until fully combined.

Spoon the dough onto the cookie sheet using heaping teaspoons, leaving about 2 inches of space between each spoonful. Place the cookie sheet in the preheated oven and bake for 10 to 12 minutes, or until the tops of the cookies are set. Once done, transfer the cookies to a wire rack and allow them to cool.

For the cream cheese frosting, blend the butter and cream cheese together until the mixture is smooth. Add powdered sugar and vanilla, continuing to beat until the frosting is creamy and smooth. Frost the cooled cookies with this cream cheese mixture and enjoy with your October shipment!
